Coins do not stack over 1000.

This is not isolated to coins. It seems as if nothing currently stack over 1000.

I am vaguely recalling coins should stack to 60,000. If they aren't, then yeah, we need to figure out why.

You would be correct Hal, they did stack to 60K. I can't remember what other item caps were in terms of stacking, but I imagine it's all the same issue—though maybe I'm wrong. At present, nothing stacks past 1000.
